Be smart and counter this by not letting them start spitting, either destroy every single volatile that's chasing you, or before you decide to do your sniper-spiderman mix, get them off your tail first without letting them start spitting. There's just too many ways to counter this, if volatiles are spitting at you, that means you're somewhere where they simply decide that they can't reach, this means they'll switch into spitting mode. Now you know that next time they'll have pin-point accuracy right? Well, I don't remember myself having such an issue, so I guess we're playing differently, I assume then I play smarter than you since this is the case. But I don't know how having a brain is going to solve that. I said they even have pin-point accuracy when you are running a mile away while jumping as well.
